Pickerelweed


An edible food source, the young leaves can be chopped and added to salads, or boiled 10 minutes and eaten with butter. The fruits hold a starchy seed that can be eaten plain, or dried and added to granola, or can be roasted and ground into flour. The leaves should be harvested in early summer and the fruits containing the seeds should be harvested in late summer and early fall. Posted by Picasa
